Much less acidic than the lemon, in the citrus family, the cedrat is sweet and tangy, with a candy effect that makes it so close and accessible.
As with all citrus fruits, cedrat oil is an essential oil extracted by cold expression from the peel of the fruit of the cedrat tree (Citrus Medica), a highly fragrant ancient citrus fruit. It is mainly produced in the Mediterranean, particularly in Calabria and Corsica.
